For the Love of Coconut Oil - Crepes

"Oh coconut oil, the more I use you the more I love you!" Yet again the delicousness of coconut oil has replaced butter in one of our regular recipes. This morning I made homemade crepes for breakfast. My husband and I had to get blood tests for an insurance discount and this past weekend we got our results. While we are both healthy, my husband had a slightly raised LDL level. So this morning when I decided to whip up crepes with applesauce I decided to use coconut oil instead of butter. You know, just try and sneak it in there. We love natural foods in the house i.e. nonchemical foods so butter or oils - real food in my opinion - are what I always use. Do I think about how it affects us? Absolutely, my father had his first heart attack at 49 but I have a hard time believing filling my body with a chemical alternative option is good for me. So we try to just eat real food and be active. I digress. Here's the recipe I used:

Crepes
1 c. flour

1.5 c. milk
pinch of salt
2 eggs
2 TBSP coconut oil, plus more for the pan

I warmed my milk in the microwave and the melted coconut oil before adding it to the rest of the ingredients in my mixer. If you do not warm the milk, the mixture will be cold and the melted coconut oil will turn back into a solid.

I heated the pan and added a tiny bit of coconut oil, letting it melt and swirling around the bottom of the pan to coat. I then added about 3/8 cup of batter. (This is just a guess, it is a little less than 1/4 c. because that is the amount that works in my small pan.) When you add the batter to the pan, you tilt the pan to coat the bottom and then I continue turning it around and around with your wrist until the batter is no longer liquid. (For those of you who don't know what I am trying to say, here is a good video of the wrist motion, skip to 1:18 to see how to do it.) Cook until the crepe is a little bubbly and nothing looks fluid. Flip crepe.

Once I flipped it, I put a spoonful of hot applesauce (I was cooking it in the crockpot the last couple of days) and spread over half the crepe. Fold the crepe. I fold mine into quarters because that is how my husband's mom does it and it is nice and easy to hold and eat.

My husband ate four before telling me how delicious they were. When I told him I used coconut oil instead of butter, he just shook his head and said you couldn't even tell. Score another point for coconut oil. As soon as he said it, I thought of my brownie recipe and whether it would help the extend the brownie's cooking time without it getting as crunchy on the top... oh the possibilities are endless. Someone should write a song about how wonderful coconut oil is. Yum.
