When you make your own bread, I swear we either run out or we have quite a bit leftover. Last week, after the bread started to get a little stale, I decided that I didn't want to make bread crumbs with it. I wanted to try making my own croutons. I am always hearing, "Oh they are so easy, I cannot believe you don't make them!" So it was time to get on the wagon and I figured, what better time to test them then February when we aren't eating a lot of salad so I would have time to perfect my recipe.
Turns out, it really wasn't anything I needed to perfect.
Butter & Garlic Croutons:
Stale and mostly hard bread
S & P
Preheat oven to 325 degrees. Melt butter and mix in garlic. Toss bread with mixture to coat. I used about 4 TBSP and about half a loaf of bread. Each piece wasn't completely coated, but each had some. Sprinkle with S & P. Toss once more.
Empty bread onto a cookie sheet and jiggle pan until they are in a single layer. Bake for a few minutes, until they start to get a little golden. Stir and toss in the pan (like you would french fries) and cook a few minutes longer. Remove from oven and cool. Due to the butter, It would be best freeze unused portions.
The verdict? It was a great snack. We never had salad, we just snacked on them all day long. They were delicious. It would be super easy to add cheese or garlic if you wanted stronger flavors. As they take less than 10 minutes (most of it hands off) I think this will be part of my weekly baking, making a big batch on the same day as I make bread and eating them through out the week. Especially with our summer salads, if they make it until dinner.
