Blueberry Honey Quick Bread

Have you ever found a new recipe and then messed up the recipe? Yeah, me too. Today I was looking for a quick bread with blueberries to make for the kid's goĆ»ter and stumbled upon this Quick Blueberry Bread recipe. Not wanting to make two loaves (let's be honest, in case it wasn't any good, two loaves would be a waste.), I cut the recipe in half. Oh and I forgot to write down one of the ingredients. Whoops.  

Blueberry Honey Quick Bread
2.5 c. white flour
1 TBSP baking powder
1/2 tsp salt
1/2 c. honey
3 oz butter (6 TBSP)
3 eggs  (1 large and two small)
2 tsp vanilla
1.5 c. blueberries (I used frozen and did not thaw)

Preheat oven to 325 °F.
Mix together flour, baking powder, salt. Set aside.
Cream butter and honey.
Add eggs and mix well.
Add vanilla.
Add blueberries
Grease and flour bread pan.
Add wet ingredients to dry ingredients and mixing quickly.
Pour batter into pans and bake for 35-40 minutes.


The verdict? The bread was delicious. We spread butter over it and it was decadent. This could easily be a breakfast bread or an afternoon tea cake.

Did you notice which ingredient I missed? We couldn't tell.
