Maple Barbecue Beef

One of the perks of purchasing an entire cow is that you get all kinds of cuts. Cuts I wouldn't necessarily purchase because I don't know what to do with them. 

This morning, while trying to decide what to make for dinner, I came across this recipe for maple barbecue beef. I immediately pulled out some beef stew meat from the freezer. Since I didn't have any beef broth, here is the recipe I followed:

Maple Barbecue Beef
1 package of stew meat (between 1 and 2 lbs)
1/3 cup maple syrup
1/4 soy sauce plus enough water to make it 1/3 cup
dried minced onion
1 TBSP cornstarch
carrots

Roll meat in minced onion (enough to coat). Place meat in crock pot. (I used a 2 quart crock pot.)
Mix maple syrup and soy sauce. Pour on top of the meat.
Cook for 5 hours.
Add carrots on top and press into juices.
Cook another hour or so, until carrots are tender.

Once meat is cooked (pulls apart easily) and carrots are tender, remove from crock pot.
Place all liquid, plus cornstarch (I whisk it in to avoid any clumps), into a pan and bring to a boil. Cook until sauce is desired thickness. I cooked mine for about 5 minutes.

The verdict? Delicious. The kids and husband loved it and it really tasted like barbecue sauce to me. Alas, there is no picture because there was nothing left to photograph.

  1. My boyfriend would love this dish! I have this great organic beef that I have been dying to use with a new recipe. I am not the greatest cook but this seems easy enough. I can't wait to give this a try this weekend. Thanks so much for sharing, I will have to let you know how it turns out.
