Easy to Peel Hard Boiled Fresh Eggs & Corn and Bacon

I am certainly not the first to write about an easy way to peel hard boiled eggs and I am sure that I will not be the last. So how to make the perfect hard boiled egg? Steam them. Really. I had read this and read this and yet we had never really done it. Why? Probably because it is hard to change our habits. Steaming eggs doesn't seem like the way to make hard boiled eggs - it's the word boiled. Gets me every time.

So how do you steam a hard boiled egg?

It is simple. Wash your eggs:


Put a large pot on the stove. Add enough water that it won't boil away in 20 minutes but also won't touch the eggs. Put the eggs into a steamer basket and put into your pan. As you can see I don't own a steamer basket so I use a metal colander. Some days, we just make do.


 

Once the water starts to boil in the pan, cover the eggs and steam for 20 minutes. After 20 minutes, submerge the eggs in ice water.


Enjoy easy peeling.



I served our "hard boiled" eggs for dinner as part of second course with corn and bacon biscuits.

Corn and Bacon Biscuits
1 c. Flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 TBSP butter
Buttermilk (a little over 1/2 cup but see recipe below)
frozen corn
cooked bacon pieces

Preheat 400°F.
Mix dry ingredients.
Mix in butter until crumbly.
Add desired amount of frozen corn (I just pour some in until it looks like enough) and bacon pieces and mix.
Slowly pour in just enough buttermilk to make dry mixture wet. Do not overmix.
Place on baking stone/sheet and bake 7-9 minutes.
Enjoy.
